The origin of matcha


The matcha comes from tea leaves grown in the shade during the last weeks before harvesting, and concentrates a unique nutritional richness and a deep color, bursting with chlorophyll.

In the heart of Japan's mountains, in gardens that are often centuries old, tea growers carefully harvest the leaves, dry them slowly and then stone-grind them using ancestral methods. The result is a fine powder with an umami taste, a subtle balance between sweetness and bitterness.

Traditional preparation of matcha


The matcha ritual begins long before the first sip. It begins with a Japanese bowl (chawan), sifted green powder, a trickle of hot water, and a bamboo chasen - the traditional hand-carved whisk with fine, supple teeth.

Pour 1 to 2 grams of organic matcha into your bowl, add 70 ml of water at 75°C, then whisk in a rapid "W" until you obtain a light, glossy foam. The movement is fluid, almost dancing. It awakens aromas, creates texture and reveals umami flavor.

This ancestral gesture, inherited from Japanese ceremony, transforms an ordinary moment into a suspended one. And if you like sweetness, add a splash of plant milk: your matcha latte will be all the more creamy and comforting.
